While we all love the traditional barbecue, it’s also nice to incorporate lighter and healthier options into the menu. This Spinach Berry Salad is the perfect addition to your Forth of July spread. Packed with vibrant colors and fresh ingredients, this salad is a perfect addition on a hot summer day.
Ingredients:
- 6 cups baby spinach leaves
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1/2 cup raspberries
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced almonds
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn (optional)
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
- Prepare the Dressing:
- In a bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper until well combined. Set aside.
- You can also purchase grocery store dressing.
- Assemble the Salad:
- In a large salad bowl, add the baby spinach leaves as the base.
- Top the spinach with sliced strawberries, blueberries, raspberries, crumbled feta cheese, sliced almonds, red onion, and torn basil leaves.
- Drizzle the dressing over the salad. Or I typically prefer to keep it on the side and let everyone drizzle to their liking.
- Toss and Serve:
- Toss the salad to ensure all the ingredients are coated with the dressing. Be careful not to crush the delicate berries. Once well combined, transfer the salad to a serving platter or individual plates.
- Enjoy!
